Are 800V cars worth waiting for if my local chargers are mostly 150 kW?

I am not in a hurry to replace my car, but most reviews keep saying "wait for 800V". My local chargers are mainly 150 kW, with a few 300 kW units on the motorway.

If the charging network around me is not there yet, does 800V matter enough to delay a purchase?

It matters less than people think unless you drive long routes often. A good 400V car with a flat curve can still be better than an 800V car that only hits the headline for two minutes.

I would check the 10-80% time and cold-weather preconditioning first.

The hidden benefit is cable and charger compatibility. On some 400V cars, the 800V chargers still work fine but the car cannot use the high voltage advantage. So yes, 800V is nice, but only if the rest of the car is also right.
